Our oyster farmers brave the toughest winter conditions to bring you the freshest oysters. When winter arrives, Native Oysters take the spotlight! Only available during the “R” months (Sep - Apr), Whitstable Natives offer a delicate, full-flavoured taste. Meanwhile, our Rock Oysters slow down in the cold—saving up energy and feeding less but retaining their unique zinky, salty flavour. Every oyster is a labour of love.
With the Protected Geographical Indicator (PGI) status, Whitstable Oysters are fat, succulent, and have an astonishing delicate fresh, briny, and metallic taste of Zinc.
History back to Rome time
Whitstable has been famous for its succulent, fatty oysters since the 1400s.
The Romans loved Whitstable oysters and documentation proves that they were sending oysters back to Rome in around 80AD.
